Pupusas are the best! Try the Queso con Loroco, oozing with a sour mozzarellalike cheese and bits of edible flower, or the Revuelta, stuffed with seasoned pork, beans and cheese.
Eat with a helping of curtido, a spicy cabbage condiment that serves as both textural complement and grease-cutting palate cleanser.
Platano Frito con Frijoles y Crema, combines sauteed ripe plantains with Salvadorean crema and smoky-smooth refried beans.
Yuca Frita o Cocida con Chicharron, cassava root fried or boiled, is another standard.
Sopa de Pollo is a restorative, hearty chicken soup with potatoes, carrots and herbs.
Atole de Elote , a smooth sweet corn drink served warm in a round gourdlike morro shell.
The Salvadorean Platter offers a basic introduction: your choice of pupusa and tamal; sauteed ripe plantain, fried yuca and refried beans. It covers all the bases, except for the crema.
