I have two big cheddar polish sausages I wanna cook tonight, but I don’t know what will be good with them. I usually have fried tatos, but I dont feel like making those. So does anyone have any other ideas?

Steam some cabbage, or roast some veggies. Saurcraut can be good too…if you’re into that.

Now my mother is polish and if you want it authentic style, make some sauerkraut with the polish sausage and a side of mashed potatoes.

potatoes always go good with polish sausages. ;)

The best way I know of is to either put them on the grill (impractical in the winter, I know), or put them in a deep skillet and simmer them in beer for 1/2 hour or till done. Serve them with spicy mustard, ‘kraut, or sauteed onions & bell peppers.

A great, simple meal is Polish Sausage and Saurkraut, with fried potatoes and a nice German Dark Beer.

How about splitting them, frying them up, placing them on some rye bread with mustard saurkraut, and them browning them in a pan like you would to a grilled cheese sandwich? I love polish sausage with kraut sammies, but my kids hate kraut :(

Sauerkraut is very good with it

Or potatoes, and onions all sauteed together. little salt and pepper.

also, squash is very good with it, if you cook it all together.

Sauerkraut. Yum. It’s a classic dish. Maybe some German potato salad or potatoes O’Brian on the side.

polish sausage goes good with jumbalia. go to a store like Piggy wiggly or some place that sells food and go to the boxed rice shelf and get a box or two of jumbalia rice mix and follow the directions on it . It tastes very good.

I like to saute some zuchinni, crooked neck squash, bell pepper, and onion together with the sausage. It makes a nice colorful looking plate, and is delicious.

Cut some cabbage up and put in a pot for stovetop cooking.
Add tomatoe juice and sausage, cut up,
Cook until cabbage is tender.
I don’t think any spices are needed because the ones in th sausage will infuse the juice.

GOLUMPKIES (STUFFED CABBAGE)

3 1/2 – 4 lbs. ground beef
3 large heads green cabbage
1 – 1 1/2 lbs. long grain rice, cooked
7 onions fried to golden brown, diced
1 lb. bacon
48 oz. jar tomato sauce, water added
garlic or garlic powder to taste
salt and pepper to taste

Fill a large pot with salted water and bring to a full boil. Cook cabbage, covered, at medium heat for 15-20 minutes.
Peel leaves away carefully and stack them.

Put sauce in pan, add approximately 1/2 jar water or more if needed and cook very slowly over low heat.

Add garlic to sauce and season to your taste with salt and pepper.

Combine ground beef, rice, onions, eggs, salt and pepper together.

In large roasting pan, cover the bottom with a few the cabbage leaves.

Fill each of the cabbage leaves that you have with the mixture of ground beef, rice, onions, etc. Roll up each leaf, turning in sides to make a packet that is like an egg roll. Lay each one open side of leaf facing down on the bottom.

Place a layer of cabbage leaves on top of each layer to separate the layers, then layer again with more cabbage rolls. Continue until all ingredients are used.

Cut bacon and layer on top of each layer.

Pour sauce on top, only filling up half of the pot since the golumpkies will add liquid.

Sprinkle salt, pepper and garlic on top and bake at 300-325F about 2 1/2 to 3 hours, basting every hour, adding more sauce if required.

Into a large pot-like dutch oven, slice the sausage in 2″ chunks, layer tatos thin, then layer on a large, thin sliced onion. Sprinkle on garlic powder and some blk pepper. Cover with the juice of two cans of frenched green beans (or regular cut) and simmer until tatos are tender about 8 minutes. Add the green beans and simmer for 4-10 more minutes, depending on how done you like your beans. You can put layers in any order you choose, really, but I like to put those that need longer cooking on the bottom.

Serve with crusty garlic bread or our fave, homemade cornbread.

I know this sounds a little odd, but it’s really good. Make your favorite chili recipe with the sausages instead of beef. Then put in casserole dish and drop spoons of cornbread batter over the top. Bake until cornbread is done…it is absolutely delicious!

Braised Sweet and Sour Red Cabbage and warm German potato salad……the cabbage is available in the canned veggie section in glass jars, all you have to do is heat it…..the sweetness of the cabbage offsets the saltiness of the sausages….Enjoy!!
